Frank Sumatra

I love coffee, but learning about it is so overwhelming!  Just trying to learn a few characteristics to look for no matter where I'm buying coffee has proven mind-boggling.  The only break I get comes from a local coffee company called Larry's Beans.  I know that I like one of their coffees, and I have an easy time remembering the name: Frank Sumatra.  I appreciate this name for the catchiness and the information it provides: I like Sumatra beans.

But wait! To my dismay I tried to research Sumatra and found that all Sumatra means is that the beans are from Indonesia.  This does indicate some characteristics of the end product, but not all.  It is not enough info to fully inform my decision at a grocery store that doesn't carry Larry's Beans.  What about the roast?  Apparently the darker the roast, the less caffeine but also the less sour flavor, which I really dislike but seem to find in many a cafe cup.

I learned on Sweet Maria's that you would ideally balance the characteristics of the roast with the characteristics of the origin of the bean.  Ugh.  The more research I do, the more paranoid I become about what kind of person I am if I like a darker roast.  Does this mean I can't handle the origin characteristics?  That I'm too amateur for that?  I now have a goal of finding a bean origin that I like at a light roast.  But until I find that, I'll go with a fairly dark roasted Sumatra.  I'm such a beginner. And I'm such a J.
Overwhelming!

At least I found great directions on how to brew a good cup the way I do each morning here:
http://coffeegeek.com/guides/howtouseapourover  ...except instead of a fancy "pour over brewer" I use a sink strainer.  hehe  At least I do own a cloth filter!  But it's called a coffee sock. =[

I've tried to look online for coffee information, and somehow it is plentiful and scarce all at once.  It is hard to find exactly what I'm looking for:  Coffee that, when a little cream is added to it, has a chocolatey rich flavor.  Is that too much to ask for?!?

PS: Did I mention that tasting and sampling coffee is called "cupping" ?  Something about that is annoying.
