Pretty much any left overs can be made into a frittata. Thank goodness I caught Giada making a frittata once and was inspired to make one on my own. Now, we use leftovers and doggy bags to make awesome frittata breakfasts. Mmmmm!
It's a quiche with no crust!
What's the recipe for this (besides the random leftovers)? Is it just eggs? You guys are master breakfast inventors.
ReplyDeleteOK you need a pan that can cook on the stove-top and go into the oven (no plastic!). Turn the oven to about 375-400. Put whatever veggies and meats you want in the pan and saute them on the stove(unless they're already cooked as with leftovers), whip up some eggs + milk in a bowl, poor that over veggies/meat and cook without stirring on the stove until the bottom sets. At this point you can drop in bits of cheese (if you do it earlier they will sink and stick to the bottom of the pan). Then you pop the whole pan into the oven and bake for a few more minutes till it doesn't wibble-wobble (technical term) anymore. Sometimes you have to broil to get the top cooked, but keep a good eye on it or it will burn super fast!
